Sugar Free Banana Oatmeal Muffins

Today, the Farmer Sr. got some homemade sugar free apple turnovers so I couldn’t show up empty handed with nothing for my Mum.  She’s just as kind and loving as he is and I like to show my appreciation by baking.  Since she likes banana, I blended a few recipes and came up with these great sugar free muffins.

Yield: 12 muffins

2 cups flour
1 cup quick cook oatmeal (I like Bob’s quick cook steel cut oats from Costco, lots of nutrients!)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp cloves (I added these because I know she loves them too)
1 tsp cinnamon
5 bananas, mashed
2 eggs
1/3 cup coconut oil or butter
1 tsp pure vanilla extract

Mix together all the wet ingredients and add all the dry ingredients.  Mix until incorporated and spoon into greased muffin tins or muffin tin with liners.  Bake 18-24 minutes (keep an eye, oven temps vary) in 350F oven.

I had them with some homemade jam and they were just sweet enough.  Just like our Mum.  She’s always thinking about others long before herself and in the 13 plus years I’ve known her I have become a better person because of what’s she’s taught me.  Thank you for being you Mum, I can’t tell you how many times I’ve said a little prayer for the support and kindness you have always shown me; it has never gone unnoticed.  In a world so full of conflict where so many people speak their minds and choose disrespect, distance and indifference over love and acceptance, our relationship has flourished because we both care.
