I had to share these muffins today. As soon as I bit into one it made me smile and that’s been a feat lately! I chipped my tooth this morning, our boiler quit on the weekend and we got a tax reassessment from the government last week too. The long and short of it is that I could have bought myself a brand new car with the combined expense of these three things. Today I was grasping at anything to make me happy and I guess muffins were it. And since we have no heat right now (besides our fireplace) using the oven was a stellar idea, bonus.
I took a basic muffin recipe and altered it again and it turned out amazing once more. I love the taste of these, the texture is great and there’s actually no sugar in them. I substituted pure maple syrup which is great compared to any refined sugars, it’s higher in minerals and lower in fructose which is better for heart and liver health. I also prefer it over artificial sweeteners because they’re created IN a plant and this is created BY a plant like I mentioned when I was writing about my gluten free coco-banana loaf.
I only had 45 minutes to make and bake these before I had to leave to pick up the eldest Daughter from playschool too so it’s a super fast recipe you could do even before you had to leave for work in the morning. 20 minutes to bake and 20 minutes to mix up!
Beat the eggs and add the rest of the wet ingredients in one bowl.
Mix the dry ingredients together in another bowl.
Grate the apples in a cheese grater or food processor and add to the wet ingredients (little hands work best for this!)
Add the wet ingredients to the dry and stir together. Don’t overmix.
Spoon into muffin cups and bake at 375 for 15-20 minutes. These are silicone ones I got for the Daughters at the M&M store in Las Vegas and they work so great, no greasing, no paper to deal with and the bottoms come out nicely browned when you stack them on a cookie sheet. Silicone bakeware is my new fave thing.
Remove, cool and eat. I had these with a little of Nana’s homemade peach jam. BOOM.
Apple Spice Muffings, no refined sugar added!
2 eggs, beaten
2/3 cup milk
1/3 cup PURE maple syrup
1/4 cup olive oil
1 cup (2 medium) grated apples, unpeeled
1 cup flour
1 cup rolled oats
1/2 cup coconut flour
1 tbsp baking powder
1 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
