Chocolate Zucchini Cake with a side of Shenanigans

A nice night out Saturday at the Farmer’s youngest bro’s house for dinner.  Drank her tequila, ate her food, DID NOT do the dishes, made them dress my kids for bed, ate her corn pops avec Bailey’s, and I woke up the baby.  Apparently it’s no biggie to do all those things but when I wanted some cherry cinnamon scenty candle melt my “supposed” BFF sis-in-law refused to share THEN she threatened to choke me and called ME a bully!  Bitch.

So I ate half of her spinach and feta scone.  And it was delish.  So delish in fact it it took all my will power to stop at half.  Now I’m trying to figure out how to recreate this amazing taste still lingering in my mouth…

While I’m working on that, here’s my chocolate zucchini cake recipe. We had this Saturday night too but the SIL’s recipe is different from mine by one banana. Which clearly means I win. Ha. That’ll teach you two to gang up on me next time. Now make me a bicycle, clown!

Remember that wicked book I got the Cool Cucumber Salad recipe out of?  It’s the same book I’ve got my tried and true Chocolate Zucchini Cake recipe from.  Amazing.  Oh and be fore-warned, these pictures suck really bad.  Still learning there…

In a large bowl, add all your dry ingredients together and give a quick stir.  In your mixer, beat the butter/marg/oil and the sugar together.  Add eggs and mix for another minute or so then add the vanilla and the zucchini.

Add to the wet batter in the mixer alternately with the sour cream (the secret ingredient!) and mix well.  Add the chocolate chips last.

Grease your pans REALLY WELL (like you want to grease your SIL when she doesn’t share her candle melts with you) otherwise you will lose precious crumbs of cake to the bottom of your pans.  I used two 8×8 pans this time because I shared and gave one pan away but you can use any kind of pan.  I normally use a bundt pan and drizzle with caramel and chocolate sauce after.  BOOM!

Bake in 325F oven for 45 minutes or until toothpick in center comes out clean.  Frost with caramel and chocolate sauce, chocolate icing or just sprinkle some chocolate chips on top.  Whatever you do, it’ll be delicious.

Chocolate Zucchini Cake

1/2 cup butter/margarine/vegetable oil
1 & 1/4 cups sugar
2 eggs
1 tsp. vanilla
2 cups grated unpeeled zucchini
2 cups flour
1/2 cup cocoa powder
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. ground cloves
3/4 cup sour cream

3/4 cup chocolate chips
